1 1/2 cups milk
3/4 cup butter
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 eggs, beaten
1/3 cup vegetable oil
1 cup buttermilk
1/4 cup white sugar
Place milk, butter and baking powder in small saucepan over low heat. Bring to a boil; boil 10 minutes. Remove from heat. Stir egg into milk mixture, then stir in oil. After stirring, stir in sugar.
Cover mixture with buttermilk and cook 5 minutes. Let mixture cool slightly. Put muffin in 8-inch pan.
Melt butter in medium microwave-safe bowl over low heat. Beat in egg yolk. Stir butter mixture into muffin batter.
Top muffin with 2 tablespoons sugar. Microwave 4 minutes longer, stirring occasionally, until muffin is fully coated. Immediately scoop into serving dish.
