Oatmeal Cupcakes Recipe


1 1/4 cups all-purpose flour

1 teaspoon baking powder

1 cup brewed coffee

1 cup butter, cubed

1/4 cup brown sugar

1 egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1/3 cup butter, softened

1 pint heavy whipping cream

8 ounces shortening cheese

1 pint vanilla ice cream


Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) round pans.

In a saucepan, combine 1/2 cup brown sugar, 1/4 cup flour, 1/3 cup coffee, 1 cup butter, brown sugar, egg and vanilla. Mix well, then pour over the yeast mixture. Pour the batter into the prepared pans.

Bake in preheated oven for 20 minutes, until golden brown. Immediately remove pans from oven and allow to cool completely.

In a mixing bowl, whip cream until soft peaks form. Beat in 1/4 cup flour, 1/3 cup butter, shortening cheese. Beat in vanilla ice cream.

Cool cooled buns for at least 10 minutes before transferring to the serving platter.

This was Excellent and very different - person B thought it was too salty so added more lemon juice. Sent it back for some tweaking.
