1 (8 ounce) package cream cheese, softened
1/2 cup mayonnaise
1/2 cup vegetable oil
1 (8 ounce) can chickpeas with juice
4 tablespoons shredded mozzarella cheese
8 ounces chopped spinach
Spread cream cheese on 8-quart microwave-safe saucepan, along one side. Add can of chickpeas, and set aside.
In a medium bowl, combine the mayonnaise, oil, peas and cheese. Mix well. Shape dough into 1-inch balls, or wrap on waxed paper to keep them fresh. Roll in spinach. Wrap in waxed paper and place inside saucepan. Boil uncovered 10 minutes. Set aside while about 8 hours, or until top is browned and clear.
