3 eggs
1 pint heavy cream
1 cup diced apple
1 pint diced banana
3 eggs, lightly beaten
3 teaspoons lemon juice
2 cups white sugar
2 tablespoons lemon zest
2 drops red food coloring
6 tart cherry tomatoes, sliced (optional)
1/2 cup sliced almonds
Place eggs in a large saucepan and lightly whisk until thoroughly dissolved. Remove from heat, and place over medium heat. Mix together cream, apple, banana, eggs, lemon juice, sugar, lemon zest, red food color. Cook, stirring, until heated all the way through. Remove from heat, and let cool.
Fill a large saucepan with water to cover, and sprinkle with tomato, almonds and fruit. Pour the egg mixture over the fruit.
Cover, and simmer for 2 to 3 hours. Serve at room temperature.
