Granny's Basil Whiskey Cake Recipe

Ingredients

3 eggs

1 cup applesauce

3 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon salt

1 teaspoon baking powder

1 teaspoon vanilla extract

1 cup butter

1/4 cup vanilla extract

1 cup corn syrup

3 cups sifted confectioners' sugar

1/2 cup distilled white vinegar

1/2 cup chopped pecans

Directions

In a large bowl, cream together the eggs, applesauce, flour, baking soda, salt, baking powder, vanilla, butter and vanilla extract. Mix in corn syrup and confectioners' sugar until well blended. Stir in vinegar and pecans. Cover dough and refrigerate overnight.

The next morning, preheat oil in a large saucepan or stockpot. Line a roasting pan with parchment paper, or place on rack to cool. Roll the chilled dough into 1 inch balls. Place in roasting pan, and cover with plastic wrap or waxed paper. Roast in the preheated oven for 40 to 60 minutes, or until a knife inserted into center of the cake comes out clean.
