1/4 cup butter
2 tablespoons all-purpose flour
3 tablespoons vegetable oil
1 small onion, diced
2 pounds skinless, boneless chicken breasts
1 (8 ounce) package cream cheese
8 ounces ricotta cheese
1 cup shredded mozzarella cheese
Preheat oven to 425 degrees F (220 degrees C).
In a large bowl, mix butter, flour, 4 tablespoons oil, onion, chicken, cream cheese and ricotta cheese. Mix well and shape into 3 patty-size patties. Transfer onto two ungreased baking sheets.
Bake in preheated oven until tender, about 10 minutes. Remove from oven and brush with oil mixture. Bake in preheated oven for 15 minutes, until golden brown.
