Classic Fried Potatoes Recipe

Ingredients

10 large potatoes, peeled and cubed

4 slices bacon, cut into 1 inch strips

2 cups butter

2 eggs

1/2 teaspoon salt

6 slices bacon

1 1/2 cups flour

1/2 teaspoon baking powder

1/2 teaspoon salt

8 slices Mozzarella cheese

1 teaspoon dried rosemary

1 teaspoon dried basil

1/4 teaspoon dried marjoram

Directions

Place potatoes in a large pot and add water to cover. Bring to a boil, reduce heat to low, cover, and simmer, uncovered, for 30 minutes. Add bacon and cook 5 minutes. Drain, cool, and cut into 1 inch cubes.

In a large skillet over medium heat, melt butter or margarine. Add eggs and salt; stir constantly until eggs are set. Reduce heat to medium-low and add flour, baking powder, salt, bacon, cheese, rosemary, basil, and marjoram.

Slowly cook potatoes over medium heat until browned, about 30 minutes. Drain on paper towels. Serve hot or cold.
