Double Orange Orange Cookies Recipe

Ingredients

1/2 cup butter, chilled and diced

1/4 cup packed light brown sugar

1 egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup diced orange

1 cup cream sugar

1 cup sliced almonds

1 cup sliced dates

2 cups semisweet chocolate chips

1 cup chopped cherry

Directions

Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment.

In a large bowl, cream together the butter, brown sugar, egg, vanilla, flour, baking powder, baking soda and salt until smooth. Stir egg mixture into the creamed mixture until just blended. Press 1/3 of the dough into the bottom and 1/2 into the top cookie sheet. Spread with the fruit mixture.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

In a small bowl, pour cream sugar over chilled cookies.

When my kids stopped asking for the recipe, I figured they didn't need it. But when I tried it again, they begged for it. AWESOME! This is the first time I've made using batter. It makes perfect bite-sized appetizers. And best of all, it's completely fool-proof. I did what I would normally do for a cheesecake and used a combination (1/2 and 1/2) of heavy whipping creme and light rum. Did not sprinkle sugar on top before covering and frosting. Will definitely be making this again. Thank you!
