2 cups margarine
1 cup white sugar
2 tablespoons ground cinnamon
1 teaspoon vanilla extract
2 eggs
1 teaspoon orange zest
1 cup buttermilk
2 cups semisweet chocolate chips
1 (15 ounce) can mandarin oranges, drained
1 red bell pepper, chopped
1 green bell pepper, chopped
1/2 cup orange juice
1 cup pecans
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream the margarine, sugar, cinnamon and vanilla until smooth. Beat in the eggs, one at a time. Mix in orange zest, orange juice and pecans. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 10 to 13 minutes in the preheated oven, until golden and a tester inserted in the center of the sheet comes out clean. Cool before cutting into squares.
