2 teaspoons olive oil
1 1/2 tablespoons lemon juice
2 cloves garlic, minced
3 tomatoes, diced
1/2 medium onion, diced
1 (8 ounce) can tomato paste with liquid
16 ounces spaghetti
Bring a large pot of olive oil and lemon juice to a boil. Continue to boil and stir in garlic and tomato. Reduce heat to low and cook for about 1 minute. Stir tomato paste into tomato mixture.
Place the spaghetti into a large stockpot. Add more olive oil to boil, cover and simmer for about 2 minutes. Stir in canned tomato juice. Simmer over medium-low heat for 5 to 6 minutes. Stirring constantly, bring to a simmer. Transfer spaghetti to a single layer or spread over bottom of grazing platter. At and end of the cooking process, add more tomato paste and tomato juice.
