1 (12 ounce) package blueberry flavored Jell-O mix
1 cup boiling water
6 cups milk
1/2 cup vegetable oil
1 cup white sugar
1 egg
3/4 cup water
Place gelatin in microwave-safe dish with plastic wrap, stirring constantly. Place plastic wrap over dish to prevent splashing. Mix 2 cups boiling water, 6 cups milk, oil, sugar, egg and water. Cover dish and microwave on high for 15 minutes, stirring every 5 minutes.
Remove plastic wrap and microwave dish on high for 3 to 4 minutes. Pour into a large bowl and stir with spoon or pastry blender until mixture is smooth. Stir in gelatin and milk; pour over cooled cookie.
Refrigerate cookies in refrigerator.
These large, dense rolls couldn't have tasted any better. They were perfectly tender, moist, and flavorful. I might borrow a component from this recipe and make my own lemon curd, but that's just my personal preference. ;) I layered the intended topping on each roll and became suspicious that the basil wouldn't really make it on its own. So I sprinkled it on top instead of drizzling it on. My fiance loved it, and I really liked the subtle lemon flavor. Just my personal preference. ;)
