1 1/3 cups milk
3 tablespoons white sugar
5 eggs
2 3/4 cups all-purpose flour
3 egg whites
2 teaspoons baking powder
1 1/3 cups pudding mix
2 tablespoons vanilla extract
3 tablespoons lemon juice
1 tablespoon ground ginger
In a medium bowl, whisk together milk, sugar, eggs, flour, egg whites and baking powder. Stir in pudding mix and vanilla extract until well blended. Cover, and refrigerate overnight.
In a separate small bowl, gently blend lemon juice with ginger. Pour onto water in pan. Place pan on stovetop or in large, metal pot.
Drizzle lemon mixture over cake during baking, and mix the lemon juice and sprinkled sugar mixture. Cover, and bake in preheated oven for 1 hour, or until a toothpick inserted into center of cake comes out clean.
