1 pound kumquats
6 quarts water
1 cup rice vinegar
3 tablespoons vegetable oil
3 eggs
1/2 tablespoon white sugar
1/2 teaspoon vanilla extract
4 cups white sugar for decoration
Place the quarts water, rice vinegar, oil, and eggs into a large saucepan covered with enough water to cover. Bring water to a boil, remove from heat, and allow to stand for 2 minutes. Remove from heat, and let stand for 2 minutes. Remove water from rice vinegar and set aside.
Return the kumquats to the pan of water, adding enough water to cover. Bring to a boil, and cook for 2 minutes on each side.
Melt the white sugar and serve warm.
