2 1/2 pounds skinless, boneless chicken breast halves
salt and pepper to taste
1 cup shredded Cheddar cheese
1 cup sour cream
1 (8 ounce) can onion, diced
2/3 cup sliced mushrooms
3 tablespoons all-purpose flour
3 tablespoons chicken bouillon granules
1 tablespoon cornstarch
Preheat oven to 400 degrees F (200 degrees C).
Layer chicken into a 9x13 inch baking dish. Sprinkle cheese over chicken. Drizzle mushroom mixture over chicken; cover.
In a 2 quart casserole dish, spread sour cream over chicken. Sprinkle cheese over sour cream. Sprinkle mushrooms over chicken. Fold in chicken. Spoon the flour over chicken. Sprinkle with cornstarch.
Bake uncovered in preheated oven for 45 minutes, or until chicken is cooked through.
