2 1/2 pounds butter
2 eggs
1/2 cup white sugar
6 1/2 cups all-purpose flour
3/4 cup dark rum
1 cup brown sugar
1 teaspoon vanilla extract
1 tablespoon cornstarch
1/2 teaspoon lemon juice
1 cup Sus roll
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large mixing bowl, cream together the butter and eggs, stirring frequently. Make a well in the center of a large glass mixing bowl, cream together the sugar, flour and brown sugar. Beat in the rum, cornstarch and lemon juice. Mix until these combine in the glass bowl; pour mixture into prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
