Kollen's Cream Oat Bread Recipe

Ingredients

1/2 cup butter, softened

1/4 cup packed brown sugar

1 1/2 cups all-purpose flour

2 teaspoons baking soda

1 cup milk

1 cup vegetable oil

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1 cup raisins

1/2 cup chopped walnuts

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan.

Sift together the flour, baking soda and milk. Cut in the oil and vanilla until the mixture is smooth. Stir the oats and raisins with a fork until evenly distributed. Mix the milk mixture with the flour mixture and the raisins and walnuts until evenly blended. Pour batter into prepared pan.

Bake in preheated oven for 35 to 60 minutes, until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes, then use a toothpick to loosen the bread from the sides of the pan. Cool completely. Dust with confectioners' sugar, or as desired.

I needed something a little different from my usual guacamole. This was perfect! Softer & crumbier than traditional guacamole, but still had a nice kick in it. Would make again. I used red pepper for color and added a little more than a pound of fresh cilantro, chopped. Could probably use black pepper instead of cilantro; could definitely use less broth. I'll be making this again.
