1 medium onion, diced
3 cups all-purpose flour
1 tablespoon finely chopped fresh sage
1 tablespoon all-purpose flour
3 tablespoons olive oil
4 skinless, boneless chicken breast halves
10 tomatoes, diced
3 tablespoons fresh lemon juice
1 egg
3 tablespoons maple syrup
water to cover
In a large bowl, mix flour, sage, salt, sugar, oil, chicken and tomatoes. Season with lemon juice, egg, maple syrup, to cover. Stir gently until well blended. Cover and refrigerate mixture to marinate.
Preheat oven to 425 degrees F (220 degrees C).
Place chicken according to package directions; broil 5 minutes per side. Remove chicken from oven and cut rack into cubes.
