This had an odd texture, was there a problem with the vinegared tomatoes or was it the almond milk? I/we need to find out more about this type of recipe so we can try it with more tomatoes.

I made this tonight and it was pretty good. I topped it off with sour cream and garlic cloves. It came out very moist and had a nice flavor. I used the Asian coconut rice underneath the sauce and I think that was a good thing because the sauce was a bit too soupy for my taste. I could see maybe leaving out the coconut, maybe cayenne for example, but I thought it was enough. I did use the Asian coconut rice underneath the sauce and I put in a small bowl with a ladle and cooked my rice to make it easier to handle. I also added the green onions and garlic cloves hoping to hasten their ripening. It was very good. I may try it over rice next time. Yummy!

This sauce is so good, I put it in jello mold and it came out with small tomatoes! It is also great on grilled chicken breast, it cuts through the middle layer of flavor!
