1/2 cup peanut butter
1 cup white sugar
1 tablespoon prepared vanilla extract
2 eggs
1 1/2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple
1 cup strawberry preserves
1 (8 ounce) can frozen orange juice concentrate
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, combine peanut butter, sugar, and vanilla; stir with a spoon until mixture is smooth. Beat eggs into peanut butter mixture alternately with vanilla and pineapple. Stir in crushed pineapple and orange juice. Transfer mixture to an 8 inch pie pan.
Bake in preheated oven for 45 minutes. Remove pie from oven and let cool completely. Glaze with non-stick spray.
