1/4 cup chopped dried currants
1 teaspoon water
1 teaspoon chopped fresh cinnamon
1 teaspoon soy sauce
1/2 teaspoon paprika
1 cup chicken broth
1/2 cup packed brown sugar
1/2 cup honey
2 teaspoons cornstarch
1/4 teaspoon ground nutmeg
1 teaspoon ground cloves
1/2 teaspoon salt
1 cup chopped cooked ham
1 cup sliced Swiss cheese
Fill an 8x8 inch baking dish with water and sprinkle with currants. Cover dish with plastic wrap and refrigerate at least 4 hours before serving.
In a large saucepan, combine water and cinnamon. Bring to a boil over medium heat. Reduce heat, cover and simmer 2 minutes, stirring occasionally.
Remove warm currants and set aside to cool completely. Whisk together the soy sauce, paprika, honey, brown sugar, honey, cornstarch, nutmeg, cloves and salt. Pour this over chicken and stir to coat. Return chicken to drippings, spoon mixture over chicken and sprinkle with cheese.
