3 cups all-purpose flour
3 cups white sugar
3/4 cup buttermilk
1 cup cornstarch
1 tablespoon baking powder
2 teaspoons Zesty Spanish apple pie spice
1 teaspoon white wine, or to taste
2 eggs
1/2 cup Cream of Tartar
1 teaspoon vanilla extract
1 1/2 cups shredded Swiss cheese
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch round baking pans.
In a large bowl, cream together the sugar, buttermilk, cornstarch and baking powder until smooth. Beat in the cornstarch mixture alternately with the bourbon chocolate chips. Mix in the pecans. Drop batter by teaspoonfuls onto the prepared pans.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted in the center of the cake comes out clean. Cool completely before removing from pans.
