6 skinless, boneless chicken breast halves
1/4 cup butter, melted
1 cup all-purpose flour
1 (10 ounce) can whole peeled tomatoes, undrained
1 (8 ounce) can diced green chilies, undrained
1 (8 ounce) can diced celery, undrained
1 (4 ounce) can sliced mushrooms, with liquid
1 (8 ounce) package cream cheese, softened
1 (8 ounce) can cream cheese, diced
1 (8 ounce) can cream cheese, diced
1 teaspoon lemon zest
salt and pepper to taste
Melt butter in a medium saucepan over medium heat. Brown the chicken pieces on all sides; remove from skillet. Mix in flour, then stir in tomatoes, chilies, celery, mushrooms and cream cheese. Mix until well blended.
Add the chicken pieces to the saucepan. Bring to a boil, reduce heat and stir in lemon zest and salt and pepper. Cook, stirring, until chicken is cooked through (no longer pink) and thickened (no longer watery). Cook and stir until the chicken is fully cooked. Drain any grease from pan and set aside.
Preheat oven to 350 degrees F (175 degrees C).
Heat a large skillet (or sheet pan or 9 inch round pan) over medium heat. Heat the butter in the skillet, sauteing the chicken pieces until golden brown.
Remove chicken pieces from skillet and drain thoroughly on paper towels. In a medium bowl, mix the flour with the onions and garlic salt. Mix into the butter mixture and mix well. Stir in the chicken pieces and add to the flour mixture. Beat in eggs, and then stir in the cornstarch. Drop by rounded spoonfuls into the bottom of a greased 9x13 inch baking dish.
Bake for 20 minutes, turning chicken once. Reduce the oven temperature to 350 degrees F (175 degrees C). Bake for an additional 20 to 30 minutes, until chicken is tender. (Note: This may be done rather quickly.) Let cool 5 minutes before slicing and serving.
Fast version tips: 1. Always make the milk thick (my personal preference, but generally everything else boils at the top). 2. ALWAYS USE THE RIGHT PAIRTOS. 3. ALWAYS TRY TO BECOME AT LEAST PRETTY DRY. 4. CLEAN THE PRETZES FIRST--HA! They're gorgeous, but they're drying. DON'T PANIC ABOUT THE SPICINESS OF THE POTATOES, BECAUSE HEAVY SOFTENED POTATOES ARE SMALER THAN OLDERER.
