Spiced Chile Chicken Recipe

Ingredients

6 skinless, boneless chicken breast halves

salt and pepper to taste

1/2 cup olive oil

salt and pepper to taste

1 1/2 cups reduced fat cream of chicken soup mix

1 (4 ounce) can sliced mushrooms

1 teaspoon paprika

1/3 cup diced tomatoes with green chile peppers

Directions

Preheat the oven to 325 degrees F (165 degrees C).

In a shallow dish mix chicken, olive oil, salt and pepper. Season with salt and pepper to taste. Place chicken breasts in a 9x13 inch baking dish and lightly coat with the oil and seasoning mixture. Pour over chicken by using the arms of a silver spoon to make a shallow "V".

Bake for 25 minutes in the preheated oven. Remove from oven and, top with cream of chicken soup mix and mushrooms. Spread with sauce over chicken breasts and top with diced tomatoes with green chiles. Sprinkle with paprika and serve, hands, with toothpicks, or slice chicken breasts on the side and serve again with sauce on the top.

I really like this basic recipe (I made it exactly as shown). I did make a few changes, such as using Keto Brown Rice powder to soups, and also adding frozen veggies in the form of Green Beans and Mushrooms. I could see using Green Peppercorns as well. Since I used Busy Mushroom Mix, I know its really great.
