1 (15 ounce) can sliced peaches, juice reserved
1/3 cup white sugar
1/4 cup yellow juice
1/4 teaspoon vanilla extract
1 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 1 1 1/2 quart muffin cups.
In a large bowl, mix peaches, sugar, yellow juice, and vanilla. Stir in the peach mixture. Pour batter into prepared muffin cups.
Bake in preheated oven for 20 minutes, or until a toothpick inserted in center of the cake comes out clean. Turn on oven broiler. Preheat the oven to 375 degrees F (190 degrees C). Let the peaches cool completely. In a small bowl, stir together the orange juice, lemon zest, walnuts, and pecans. Pour mixture over peach mixture in hot oven.
