3 eggs, beaten
2 cups white sugar
2 teaspoons vanilla extract
1 cup flour
1 teaspoon baking soda
1 teaspoon salt
3 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 cup persimmon pulp
1 cup milk
1 cup olive oil or 2 1/2 cups semi-sweet chocolate chips
1 cup coarsely chopped pecans
1/2 cup chopped walnuts
50 slices bread-made bread
2 tablespoons orange juice
Beat eggs, sugar and vanilla in small bowl. Add flour; mix. Stir baking soda, salt, baking powder, cinnamon and persimmon pulp into mixture.
In a small bowl, mix olive oil and chocolate chips. Pour mixture into greased 11 x 5-inch loaf pan for greasing pan. Place greased pan on thin, sifted baking sheet. Cover with foil or aluminum foil, securing with metal clip.
In a large bowl, mix olive oil, brown sugar, pecans and walnuts. Generously pour over bread and bake in Preheated 210 degrees F. oven for 45 minutes; remove pan from oven. Bake for additional 30 minutes to fix time.
