Risotto (Roma) Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1/2 cup butter, softened

2 eggs

2 teaspoons white sugar

1 cup milk

2 cups shredded sharp Cheddar cheese

1 (16 ounce) package frozen mixed vegetables

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a small bowl, mix cream cheese, butter and eggs until well blended, about 3 minutes. Stir in sugar, milk and cheese. Spread mixture into a 9x13 inch baking dish.

Bake at 375 degrees F (190 degrees C) for 25 minutes, or until warmed through.

Stir cooked and cooked rice into cream cheese mixture and season with salt and pepper.

Place shredded cheese and vegetables in a large bowl; stir into cream cheese mixture. Spoon into dish.

Bake in preheated oven for 40 minutes, or until rice is tender.
