4 eggs
2 tablespoons lemon juice
1 teaspoon vanilla extract
2 1/2 cups milk
1 1/2 teaspoons lemon zest
1 tablespoon lemon zest
1 1/2 teaspoons lemon juice
2 tablespoons lemon zest
In a small bowl, stir together eggs, lemon juice, milk, lemon zest and lemon zest.
Place strip of foil onto a large jelly roll pan. Bring pan to a full rolling boil. Cover, remove from heat and let cool completely. Fill jelly roll pan with egg mixture and place seam-side down on foil. (Note: Make sure foil is completely covered so that there is no escaping.)
Bake in preheated oven for 1 hour.
