Apple Bread II Recipe

Ingredients

1/2 cup butter

2 1/4 cups white sugar

2 eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

3/4 cup milk

1 cup apple juice concentrate

3/4 cup vegetable oil

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease 8 muffin cups or line with paper liners.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs and stir in the vanilla. Combine the flour, baking powder, baking soda, cinnamon and milk; stir into the creamed mixture until just blended. Fill 1/2 cup of each muffin with apple filling mixture. Fold the remaining pieces into the filling and then press gently into the bottoms of the muffins.

Bake in preheated oven for 30 minutes. Remove muffins from pans and let cool on racks.

When a muffin is cool, scoop half of each cup of filling into the center of each muffin. Spread the remaining half of filling over the filling in the pan. Top the muffins with a golden streusel. Place 2 tablespoons apple juice concentrate over the top of the apples. Place greased knife on top of the apple filling. Hint: If you use a

stick or fork, fold the scraps of paper between each muffin cup to make a pattée.
