1 (10 ounce) package cream cheese, softened
1 cup milk
1 1/2 cups white sugar
4 eggs
4 teaspoons lemon juice
2 cups apricot preserves
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 1 quart muffin tin.
Mix together cream cheese, milk, sugar, eggs, lemon juice, apricot preserves and pecans. Pour mixture into prepared muffin cups.
Bake in preheated oven for 45 minutes, or until a toothpick inserted in center of muffin comes out clean. Let cool in pan for 20 minutes.
