1 (18.25 ounce) package lemon cake mix
1 (3 ounce) package lemon flavored Jell-O
1 (4 ounce) can fruit flavored Jell-O
1 (4 ounce) package instant powdered lemonade mix
4 eggs
1 (3 ounce) package instant vanilla pudding mix
1 cup white sugar
1 1/2 cups milk
2 teaspoons lemon extract
1/2 cup lemon zest
1 (16 ounce) can raisins
1 teaspoon lemon extract
1 (2 ounce) can sliced pineapple, drained
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) full-size muffin cups or line with paper muffin liners.
In a large bowl, mix cake mix, lemon flavored gelatin, fruit flavored gelatin, lemonade mix, pudding mix, sugar, milk and lemon extract. Beat until blended. Using a 2 or 3-quart resealable plastic bag, mix fruit liquid foods and lemon extracts.
Spread filling into 2-quart resealable plastic bag; add raisins or pineapple. Seal bag tightly and shake vigorously until well coated.
Put filling into greased and floured 9x13-inch baking dish. Pour lemon juice over filling. Bake in preheated oven for 25 to 35 minutes, or until toothpick inserted in center comes out clean. Cool completely before serving.
