1 cup butter
2 egg whites
3/4 cup white sugar
1/2 teaspoon vanilla extract
1 cup peanut butter
1 teaspoon vanilla extract
1 teaspoon hot water
3 eggs
3 cups all-purpose flour

Heat oven to 375 degrees F.
Beat butter and egg whites until foamy. Scoop preserves and 2 tablespoons into each cookie.
Roll out cookie dough using two forks and pinch edges to seal in best you can. Place over a large sheet of waxed paper. Brush peanut butter and vanilla on remaining dough. Place cookie over cookie sheet. Roll up creamed cream into a 2 inch log. Place over cookie sheet.
Bake in preheated oven for 20 minutes, or to desired custom. Cool slightly, and cut into squares. Pour hot peanut butter all over cookie sheets. Cool completely before cutting into squares or small squares.
