1 small yellow squash, peeled and sliced
1 medium green bell pepper, seeded and cut into strips
1 medium onion, chopped
1 medium cucumber, seeded and cut into strips
1 medium zucchini, cut into strips
1 medium cucumber, seeded and cut into strips
1 medium tomato, sliced
2 medium tomatoes, peeled and seeded
1 medium cucumber, peeled and cut into strips
1 medium green bell pepper, seeded and cut into strips
1 medium yellow onion, chopped
1 medium carrot, sliced
2 medium carrots, sliced
2 medium cucumbers, sliced
1 medium zucchini, sliced
In a large bowl, toss squash and bell pepper with salt.
In a small bowl, mix together the onion, cucumber, bell pepper, onion, cucumber and zucchini.
Sprinkle pepper with remaining seasonings. Coat squash and bell pepper with tomato mixture. Spread with cucumber mixture.
Cover and refrigerate 8 hours.
