Caramel Corn Pudding Recipe

Ingredients

1 cup white sugar

1 cup corn syrup

2 cups brown sugar

1 quart beef broth

1 quart milk

3 tablespoons butter

Directions

In a large saucepan over medium heat, combine the white sugar, corn syrup, brown sugar, broth and milk. Stir gently until sugar is completely dissolved.

Remove from heat, and pour into a large double boiler filled with ice. Preheat oven to 450 degrees F (220 degrees C).

Place marshmallow creme in bottom of 9-inch medium glass dish. Pour marshmallow creme into greased 9-inch pie pan. Arrange 1/2 cup of crumble over creme.

Top half of pudding with the crumble and spread butter over pudding. Pour remaining pudding over marshmallow creme. Cover, and refrigerate overnight.

I added frozen veggies, a little more broth, and served it over chicken rice-a-roni---this is really good. My husband loved it and I did too. I will try using marinated chicken next time; will try with hens topped with bacon and then mayonnaise.
