1 cup butter
3/4 cup brown sugar
1 egg
2 teaspoons vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 cup vegetable oil
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg and vanilla. Combine the flour, baking soda and oil; quickly stir into the creamed mixture. Drop by rounded spoonfuls onto the cookie sheets.
Bake for 6 to 8 minutes in the preheated oven, or until toothpick inserted in the centers comes out clean. Allow cookies to cool completely on the baking sheet before removing to wire racks to cool completely.
