1 1/2 cups fresh pineapple, peeled with juice reserved
1 cup concentrated cream of celery
4 ounces lemon-lime flavored Jell-O
1/2 cup white sugar
1 liquid lemon-lime soda
1/4 cup vegetable oil
1/3 cup nonfat yogurt
2 tablespoons lemon juice
In a large bowl combine pineapple, celery, lemon-lime, sugar, lemon-lime soda, oil and yogurt. Mix until well coated. Let stand 5 minutes.
Remove pineapple from marinade. Scoop and cube into small pieces. Shape into 1/2 inch balls and place balls in a small bowl, invert and seal edges of both bags.
Line a mixing bowl with waxed paper. Place mixture on waxed paper to seal. Heat in microwave or in a small saucepan to about 40 degrees F (2 to 3 minutes). Cover and microwave about 15 minutes, stirring halfway through cooking time. Remove pineapple from marinade, cool and peel.
