1 pound lean ground beef
2 tablespoons Italian-style seasoning
1/4 cup chopped onion
1 (10 ounce) package frozen mixed vegetables, thawed and drained
2 (16 ounce) cans Italian-style scrambled eggs
2 tablespoons olive oil
1 onion, sliced
1 cup shredded mozzarella cheese
1 teaspoon Italian seasoning
1/2 teaspoon dried basil
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix the lean ground beef, Italian-style seasoning, onion, mixed vegetables, eggs, oil, onion, cheese, Italian seasoning, basil and dried parsley. Reserve 1 cup of the mixture for your tortilla breakfast.
Top with remaining 2 cups of mixture, then roll tortilla into 1/2 inch thick slices. Cut into squares.
