3 large tomatoes - peeled, seeded, and chopped with juice reserved
2 tablespoons butter
2 1/4 tablespoons all-purpose flour
1 teaspoon paprika
5 cloves garlic, minced
1 (10 ounce) package frozen garbanzo beans, thawed and drained
salt and pepper to taste
salt and fresh pepper to taste
1 cup water as needed
1/2 fluid ounce Italian-style tomato paste
1 tablespoon white sugar
Whisk together the tomato juice and butter or margarine. Dissolve 1/2 cup flour in tomato juice; stir after about 2 minutes.
In a medium saucepan over moderate heat, combine tomato paste, sugar, salt, pepper and water. Bring to a boil and remove from heat. In a small bowl, mix together tomato paste, sugar and water. Heat the mixture in a small dish, stirring occasionally until smooth. Remove mixture from saucepan and sprinkle sauce over tomato layer; cover.
Preheat oven to 350 degrees F (175 degrees C).
Divide tomato layer, tomato paste and water into mixture. Cover and refrigerate for 1 1/2 hours or more.
Roll tomatoes at 350 degrees F (175 degrees C) and sprinkle with salt and pepper. Cut into 1 inch slices.
Whip remaining 1/2 cup water. Or, blend tomato juice and butter with remaining 1/2 cup water and pour into tomato/water mixture.
Sprinkle tomato paste mixture over ham for cleanup
Open plastic container and pour approximately 1 tablespoon tomato paste over ham.
