1 1/2 cups white flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 cup vegetable oil
1 (11 ounce) can bread flour
1 teaspoon chow mein noodles
1 cup shallots, finely chopped
1/2 cup butternut, finely chopped
1/2 cup dry white wine
1 teaspoon paprika
2 teaspoons tortilla chip seasonings
In a medium bowl, stir together 1 1/2 cups flour, salt and 1 tsp of baking soda. Stir in 1/2 teaspoon of cinnamon and 1 cup oil. Mix in 1 cup flour, chow mein noodles and 1 cup shallots. Stir until all ingredients are well blended, about 3 minutes. Form dough into one inch balls; place 1 inch apart on greased baking sheet.
In a large bowl, stir together 1 cup flour, salt and 1 tsp. cinnamon until all ingredients just come together. Drop into prepared bowl with 2 tablespoons chow mein and 2 tablespoons wine. Stir to combine. Sprinkle 2 teaspoons paprika and 2 teaspoons tortilla chips seasonings onto the center of the top of the dough, then sprinkle with 2 teaspoons paprika and 2 teaspoons tortilla chips in mixture. Cover with foil and set in a preheated oven to ensure good browning and golden browning from the sides of the loaf.
Remove from baking sheet. Using knife, cut loaf into two 1/2 inch cubes. Bread should be cut in half lengthwise. Using knife, make two shallow recesses in the top of the loaf. Make two slits in each corner for steam vents.
