1/4 cup butter
1 1/2 cups white sugar
2 eggs
1 teaspoon vanilla extract
3 cups boiled eggs
1/2 teaspoon vanilla extract
Preheat oven to 425 degrees F (220 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, sugar and white sugar until smooth. Beat in the eggs one at a time.
Gradually mix in the flour and vanilla; mix until blended. Stirring constantly, beat in the eggs one at a time. Drop batter by 1/4 cup at a time onto the prepared cookie sheets. Bake in preheated oven for 8 to 10 minutes, until light brown. Remove from cookie sheets to wire racks. Cool completely.
