1/2 cup roasted pistachios
2/3 cup Anise oil
1/3 cup white sugar
1/4 cup kirsch syrup
3 cups crushed pineapple
1 cup sodas
In a medium bowl, mix roasted pistachios, Anise oil, and sugar. Sprinkle everything over pistachios except the seeds.
Heat oven to 350 degrees F (175 degrees C). Spread or pipe cookie sheets onto cookie sheets in a single layer.
Bake in preheated oven for 40 to 50 minutes. Allow cookies to cool slightly on baking sheet. Dust with anise sugar and pineapple syrup. Immediately drop a 1/2 cup of the peach-flavored frosting into the center of each cookie; sprinkle with the crushed pineapple syrup. Repeat with remaining sugar. Immediately drop a fruit filling into the center of each cookie. Cover the cookie completely with the frosting, and seal edges of the cookie.
