1 cup extra virgin olive oil
2 cloves garlic, finely chopped
2 tablespoons low fat fajita seasoning
1 medium onion, diced
1 medium zucchini, diced
1 green bell pepper, diced
1 medium green bell pepper, diced
3 teaspoons lemon juice (optional)
3/4 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C).
Lightly oil an 8x8 inch baking pan.
Spread oil over pan, then sprinkle with garlic.
Place onion and turnips on a plate. Sprinkle with fajita seasoning.
Place green bell pepper, green pepper and lemon juice over onion and turnips. Drizzle juice over vegetables. Fry in batches on each side. Sprinkle with salt. Fry for 1 minute, until vegetables are browned. Drain on paper towels. Serve hot or cold.
