Molasses Shortbread Cookies Recipe

Ingredients

1/2 cup margarine

1/4 cup dark molasses

1/4 cup all-purpose flour

1 teaspoon baking powder

1 1/4 teaspoons baking soda

1 teaspoon ground cinnamon

1 1/2 teaspoons ground nutmeg

1/4 teaspoon ground cloves

Directions

Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.

Melt margarine in a medium saucepan over medium heat. Stir in molasses. Stir in the flour, baking powder, baking soda, cinnamon and nutmeg.

Drop cookies by tablespoonfuls onto cookie sheets. Bake for 8-10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I compared this to a similar recipe from another cookbook. Both used whole grains, used vanilla almond milk, used sugar cookie crumbles, and so on. These were all good choices--I did use twice the amount of cream cheese and cookie dough, and sprinkled them with coarse sugar. But, I know someone else who ate this and said it was better than the recipe stated. In her review she said: "This didn't resemble the clotted cream that you get from a traditional ice cream, it was clumpy and gooey and boring. I would eat this again but I think it would have made more sense if I made the ice cream once instead of once and a half. And, I would have added more lemon juice, and/or dried it with a dill
