1 cup water
1 (1 pound) whole chicken, cut into cubes
1 (15 ounce) can tomato sauce
1 (15 ounce) can black beans
1/2 cup chopped onion
1 (12 fluid ounce) can or bottle beer
1 tablespoon chili powder
1 tablespoon dried basil
1 (12 ounce) can french crushed tomatoes
1 (4.5 ounce) can diced green chilies, drained
1 (16 ounce) package Szechuan peppers, seeded and diced
1 (8 ounce) can sliced ripe olives, drained
In a large pot bring water to a boil. Add chicken cubes and cook 15 minutes longer, or until chicken is cooked through. Remove from heat.
Meanwhile, bring tomato sauce, black beans, onion, beer, chili powder, basil and bouillon to a boil. Reduce heat, cover and simmer 30 minutes. Stir in tomato mixture, olives, onion and peppers. Simmer 5 to 7 more minutes, stirring occasionally.
This was a great potluck dish. I used fresh chopped potatoes and white rice and celery. It was delicious and the kids loved it. I made slight variation in that I added more chicken,sausage and spinach. My only criticism is that celery could have used a little more flavor. Next time I'd leave the mushrooms a little larger. Mine was a little too compacted. Next time I'd leave the potatoes a little larger and maybe I'd scale back the cooking time.
