1/4 cup butter, softened
1 cup all-purpose flour
1/4 cup packed brown sugar
2 eggs
1 cup milk
1 egg yolk
3 tablespoons lemon juice
3 tablespoons lemon zest
1 teaspoon vanilla extract
3 cups fresh bread crumbs
Preheat oven to 350 degrees F (175 degrees C) or 400 degrees F (200 degrees C).
In a medium bowl, cream together butter, brown sugar and brown sugar. Stir in eggs, milk and yolk yolks until well blended. Mix lemon juice and lemon zest into creamed mixture. Mix flour and baking soda into creamed mixture just as pulverized flour around the edges. Spoon 1/3 of the batter into the bottom of pie pan, then top with remaining pie batter. Place bread crumbs in top of remaining batter in pan. Shape into six 3 inch squares, shape into oval on one side, etc. Place on the bottom of pan. Bake in preheated oven until filling is bubbly and golden brown.
