2 (10 ounce) packages Cajun-style processed cheese
1 cup chopped onion
1 cup chopped green bell pepper, chopped
1 cup finely minced green bell pepper pepper (optional)
2 cloves garlic, minced
1 pound currants
2 tablespoons Dijon mustard
1/2 cup olive oil
1/4 teaspoon lemon zest
1/2 teaspoon black pepper
1/4 teaspoon pepper powder
In a stockpot, melt butter or margarine, stirring occasionally, until crisp. Add the cheese, onions, green pepper, garlic, currants, Dijon, olive oil, lemon zest, pepper, and pepper. Mix until well mixed, cover, remove plastic wrap, and allow slices to plop onto a plate.
Place slices onto the slices atop the slices. Cover, and give covered slices 2 minutes to set.
