2 tablespoons vegetable oil
1 pound lean ground beef
2 eggs
2 teaspoons chili powder
1 cup diced onion
1 (10.75 ounce) can refried beans
1 (4 ounce) can tomato paste
1/3 cup shredded Cheddar cheese
1 (7 ounce) can tomato soup
1/3 cup shredded Monterey Jack cheese
In a medium skillet over medium heat, cook beef until evenly brown. Drain grease.
Heat oil in a large skillet over medium heat. Place browned ground beef in skillet. Cook over medium heat for 5 minutes, stirring frequently. Mix in eggs, chili powder, onion and refried beans. Cook for 5 minutes. Stir in tomato paste and cheese. Remove from heat. Stir in Monterey Jack cheese and tomato soup. Pour over meat.
Cover and refrigerate at least 1 hour before serving.
