1 pound apples - peeled, cored, and sliced
1/2 cup white sugar
3/4 cup shortening
1 egg
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup water
1 cup flaked coconut
Preheat oven to 325 degrees F (165 degrees C).
Place apples into the bottom of a 9x13 inch baking dish. Spread with 1/2 of the sugar. Drizzle with the rest of the sugar, and coarsely chop.
In a medium bowl, boil over medium heat, whisk together the egg and cinnamon, pour in the boiling water, and remove from heat. Stir in the coconut, and pour into dish.
Cover with foil, and let stand 30 minutes.
Preheat oven to 350 degrees F (175 degrees C). Mark a path down center of large apple with a knife; set aside.
Cut wafer-thin slices into apples; bisect all apples, and arrange 3/4 of them in bottom of 9x13 inch baking dish. Layer coconut, 1 strip at a time, on tops of apples, covering completely. Let sit 10 minutes, then slice on a serving platter.
Bake at 325 degrees F (165 degrees C) for 30 minutes.
