1/2 cup olive oil
1/2 cup lemon juice
1/2 onion, diced
1 (16 ounce) can black beans, rinsed and drained
1 (2 ounce) can tomato paste
1 teaspoon dry milk powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon freshly grated Parmesan cheese
In a medium saucepan, heat oil over medium heat; stir in lemon juice, onion and half of the black beans. Bring to a boil, stirring frequently. Reduce heat, and simmer for 45 minutes, stirring frequently. Serve warm.
Stir tomato paste and dry milk powder into the olive oil mixture, scraping the bottom of the pan. Add the oregano, basil, Parmesan cheese, oil mixture and milk/tomato mixture. Simmer slowly 5 minutes, stirring and stirring occasionally. Serve immediately.
