1 cup sun-dried tomatoes
1 cup almond paste
1 cup mayonnaise
1 1/2 teaspoons coarse salt
2 tablespoons white sugar
2 small eggs
4 tablespoons milk
1 teaspoon lemon juice
In a medium saucepan, combine the sun-dried tomatoes with the almond paste, mayonnaise, salt and sugar and a pinch of hot water (optional). Cook over medium-low heat, stirring constantly, until well done set. Continue to heat until quickly and gently whisk in the eggs, one at a time. Remove from heat, add lemon juice and salt to the mixture; whisk together.
