Ham and Potato Casserole Recipe

Ingredients

3 pounds all-purpose flour-based baking mix

1/2 pound shredded mozzarella cheese

1 (6 ounce) can sliced mushrooms, drained

1 pound smoked ham, sliced into 1/2 inch rounds

1 pound sliced Swiss cheese

3/4 pound bacon, sliced

5 eggs, room temperature

2 cups cubed sweet potatoes

4 cups shredded Cheddar cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, mix flour, cheese, ham, mushrooms, Swiss cheese, bacon and eggs.

Shape mixture into a 1 1/2 inch ball. Place about 1 1/2 inch from the center of each ball. Roll seam side down into a 6 inch diameter cylinder.

Bake in preheated oven for 30 minutes, or until golden brown and juices run clear.

Meanwhile, grease an 8x8 inch casserole dish. Place bacon in a large skillet. Cook over medium heat until evenly brown. Remove from pan to paper towel lined medium bowl.

Return mushrooms, bacon and eggs to pan. Drizzle with egg mixture. Pour vegetables over all and sprinkle with Cheddar cheese.

Bake in preheated oven for 30 minutes, or until cheese is bubbly.
